today, i baked the shit out of a loaf rosemary bread today using this recipe. i combined the ingredients all by hand by following the first comment in the reviews section.
it was ego-boostingly delicious for a first try and i definitely suggest anyone try it, it really wasn’t too difficult - it’s mostly waiting, to be honest.
i’ll definitely make it again in the near future, so i’ll update this post with a pretty picture and maybe even a step-by-step tutorial :)
my next venture? new york-style bagels!

Chorizo, Tomato, Spinach, Feta and Egg Bake

Ingredients:
- 1 chorizo, sliced
- 5-6 cherry tomatoes
- 1/5 cup chopped thyme and oregano
- 1 cup fresh baby spinach
- 1 tbsp olive oil
- Salt and pepper
- 1 egg
- 3/4 cup milk
- 1/4 cup crumbled feta
Whip together the egg and milk. Saute the rest of the ingredients in an oven-proof skillet (except the spinach and feta) until the sausage is mostly cooked, before adding the spinach. Once the spinach is wilted, add the egg mixture and cook for 1-2 minutes. Top with cheese, and place under the hot grill of an oven for 10 minutes or so, until golden.
Sesame Crusted Tuna with Roasted Radishes, Pomegranate and Red Onion
Ingredients (serves 2):
- 1 bunch of radishes, larger ones cut in half
- 1/4 cup roughly chopped thyme
- 4-5 cloves of garlic, woody ends chopped off but papers on
- 2 pieces of tuna
- 1/2 cup sesame seeds
- 1 pomegranate, skins removed
- 1/2 red onion, shaved
- Olive oil, salt and pepper
- Chopped parsley (to garnish)
Preheat oven to 200C / 375F. Toss radish garlic with thyme, olive oil, salt and pepper. Bake for 30 minutes.
Get a skillet with a few tablespoons of olive oil really, really hot. Press tuna into the sesame seeds and season with salt and pepper. Sear for 1 minute (or less) on each side, depending on the thickness. Pull out of the pan and slice. Serve on a bed of radishes and top with pomegranate and onion, and a bit of parsley.
Rosemary Garlic Chicken Cutlets with Tomato and Haloumi
I was aiming for a healthier version of a chicken parmesan, and this did the trick. Served with sliced tomatoes (marinated for about 30 minutes in a drizzle of olive oil, salt, pepper and rosemary) and grilled haloumi.
Ingredients:
- 2 chicken breasts, cut into strips
- 1/2 cup breadcrumbs
- 1/4 cup chopped rosemary
- 3 chopped garlic cloves
- Salt and pepper
- 1 egg, beaten
Preheat the oven to 200C / 375F. Mix up the breadcrumbs, rosemary, garlic, salt and pepper. Dip chicken in egg, and then roll in the breadcrumb mixture. Pop into an oven proof pan greased with a bit of olive oil and bake for about 15-20 minutes on each side, depending on the thickness of the kitchen.
Thyme Poached Eggs with Bacon and Ciabatta
I found this excellent recipe for ciabatta bread (I made it into a loaf instead of pizza), the only change is that I added another half cup of flour or so since it was too watery and didn’t look like the photos. Great recipe, very soft fluffy bread and it only took a couple hours to make and it very simple on a Sunday morning.
For the eggs, I poached them in cellophane (using a bowl, crack an egg into the center of the cellophane, add a sprig of thyme, and scrunch up the top). Boil for about 3-5 minutes until the whites are cooked. Serve with fresh slices of ciabatta and bacon.
